Apple Cake

Cooking spray 
2 large tart apples  cored and chopped
8 tbsp. butter, divided
1 cups sugar divided 
1 cup walnuts, coarsely chopped
1 egg 
2 tsp. cornstarch
1 cup all-purpose flour 
cup evaporated milk
1 tsp. baking soda 
1 tsp. lemon juice
tsp. cinnamon
 1 tsp. vanilla extract
tsp. salt

1. Preheat oven to 350. Coat a 9” square pan with cooking spray.
2. Combine 5 tbsp. butter and 1 cup sugar, beat with a mixer at medium speed until fluffy. Add egg and beat well. Stir in flour, baking soda, cinnamon, salt, apples and walnuts. Batter will be stiff. Spoon into prepared pan, smooth top. Bake about 35 min.
3. Combine remaining 3 tbsp. butter, cup sugar, cornstarch and evaporated milk in a saucepan; bring to a boil over medium heat. Boil 2 min., stirring constantly. Remove from heat; stir in lemon juice and vanilla. Pour over hot cake just before serving. Serve warm.
